Today I will be sharing with you this delicious veggie & hummus sandwich, and my thoughts regarding restriction.
Are you a fan of sandwiches 🥪?
Nothing is quicker than making a sandwich for lunch or dinner. Am I right?
Being the vegetable lover I am, this is the perfect way to add some extra servings. Say goodbye to boring old deli meat and cheese sandwiches, and say hello to fun and flavorful veggie filled ones!
Right now squash is not in season, but I have been craving this veggie and hummus sandwich recipe of mine. To make this I sauté yellow squash, zucchini, red onion, and spinach in a pan. While that’s happening I let my bread toast. Then I lightly spread hummus on each side. To finish it off I layer the vegetables on the toast, sprinkle on some feta, squeeze lemon juice over top, and you are good to go!
One thing to note your bread might get soggy if you let the sandwich sit. If you make this ahead of time just store the ingredients separately.
“Why are there chips on the side? That’s not healthy!”
Then of course I added some chips on the side, because my nutrition philosophy does not include restriction 🚫. I might pick out a brand that contains less sodium and fat some days and other days I might be eating out and not even think about it.
Let’s take a look at my thoughts regarding restriction.
There is no perfect way to eat. Should we try to eat more fruits, vegetables, whole grains, lean proteins, and healthier oils? Yes! Should we stress if we don’t follow that 100% of the time? No!
When you “allow” yourself to have chips or a cupcake you are not restricting yourself. Therefore the next time you encounter them you are less likely to binge on a whole bag.
Am I saying eat chips everyday to your hearts desire? No! I am talking about building a positive relationship around food.
