Avocado Green Goddess Dressing

Then you are going to love this Avocado Green Goddess Dressing!
Recently I had a spicy and zesty green goddess dressing at a local salad shop. Since then I was inspired to make my own version.
Instead of oil as the fat source, this dressing contains avocado. Avocados are a heart-healthy fruit that contains monounsaturated fatty acids. I love adding avocados to recipes. Especially since they are rich in various nutrients such as Folate, Vitamin K, Vitamin E, Vitamin C, and Potassium.
I love added nutritious fat sources such as avocados or olive oil to salads to help aid in the absorption of fat-soluble vitamins. Fat-soluble vitamins found in vegetables are Vitamins A, D, E, and K. You can increase the absorption of vegetables in salads by adding dressings containing olive oil, nuts, seeds, and avocados.
To add a bit of tanginess and protein I used greek yogurt as the base for the dressing. Greek yogurt is usually my go-to for making homemade versions of dressing that call for mayonnaise, buttermilk, or sour cream.

This avocado green goddess dressing pairs perfectly with salads or Mexican inspired grain bowls.
- 1 avocado, pitted
- 3 garlic cloves
- 2 tablespoons lime juice
- 1 jalapeño, seeded
- 1 cup Greek yogurt
- 1/2 cup cilantro
- 1/4 tsp salt
- Place all the ingredients in a tall glass or jar and blend until smooth with an immersion blender. If you have a traditional blender you can blend the ingredients in this.
- Add 3-4+ tbsp of water for desired consistency.
- Serve over salad such as this Mexican Tossed Kale Salad.
Store in the fridge for 3-4 days.
